Since most people travel on the weekends for their holidays, there is more demand for the weekends hence they are more costly, the weekdays are less preferred and hence cheaper. In case of a Monday this is generally preferred by businessmen making business trips, so it also makes sense to avoid Mondays.
Airlines generally offer discounted fares to lure customers, and this is only on limited seats. If you are not quick these seats will be taken on a fly.
Now the TRICKS which will lead you to cheap airline tickets
Trick 1
Be flexible when scheduling your travel. Tuesdays, Wednesdays and Saturdays are normally the cheapest days to travel; late-night flights, early morning flights and flights with at least one stop lean to be economical as well.
Trick2
Round Trips are always cheaper, if you any way have to come back to where you started from you may as well book round trips.
Trick 3
If there is no sale going on by the airlines, it is a good idea to buy your Cheap Airline Tickets through consolidators who buy in bulk and sell them on discounted rates.
Trick 4
If it’s not urgent, it is always a good idea to book your tickets in advance. Reserving at least 21 days a head, book your tickets even earlier for holidays in festival seasons, particularly in November and December Keep in mind that holiday ‘blackout periods’ may prevent you from using frequent-flier miles.

We want to spend 2 nights somewhere other than Santorini and we are not too impressed with Athens. Aegian and Olympic are the cheapest from Greece.. but cost a lot from anywhere else.. so just looking for other options

Maybe they have some kind of deal with KLM who has direct flights Dubai-Amsterdam vice versa? Most comfortable and cheap is now Turkish Airlines through Istanbul transit. Alitalia I wouldn’t recomment now they are almost broke!! Maybe other option?
